The Bachelor of Science in Nutrition Science is an interdisciplinary degree within the Undergraduate Public Health Studies program. It integrates the biological and chemical foundations of human nutrition with the social, behavioral, and ecological dimensions of public health. The curriculum prepares students to understand nutrient metabolism and physical activity principles as they relate to chronic disease prevention and management, assess dietary patterns across the life cycle, and evaluate determinants of nutritional status. Through a public health lens, students analyze nutrition research, explore health inequities, and develop culturally responsive strategies to promote health equity. The program emphasizes scientific inquiry, ethical practice, and effective communication. Graduates are well-positioned for careers in health sciences, public health, research, and policy or advanced study.

Degree Requirements & Competencies

Students must fulfill the Newcomb–Tulane core curriculum requirements and the PHNS major requirements.

BS in Nutrition Science – Core Competencies 

  • Describe the fundamental principles of human nutrition and metabolism. Students will explain how nutrients are digested, absorbed, transported, and utilized in the body.
  • Explain nutritional needs across the life cycle and the factors that influence dietary intake. Students will discuss psychological, behavioral, social, and cultural influences on food choices and describe programs that support nutritional health.
  • Apply evidence-based approaches to evaluate and interpret nutrition information. Students will describe how to assess the credibility of nutrition sources and apply evidence-based guidelines to inform practice.
  • Demonstrate effective communication of nutrition concepts to diverse audiences. Students will develop oral and written materials tailored to academic, clinical, and community settings. 
  • Discuss public health nutrition strategies and factors contributing to health disparities. Students will explain how social, structural, and environmental factors influence nutritional health and describe approaches to promote equity.

Nutrition Science Major Requirements

The PHNS major requires a total of 65-66 credits, consisting of the core (30 credits), electives (6 credits), and required science courses (29-30 credits).

  • Students may not double major in any two Undergraduate Public Health Studies majors. 
  • Nutrition Science majors may not minor in Public Health.
